Born and raised in St Albert, Executive Chef Lindsay Porter’s focus, even as a child, has always been on the culinary world. This passion for the culinary arts reflects through her menu designs — from the colors, to the flavors, to the textures. "The menus are really my form of expression."

Lindsay graduated in 2006 after completing the NAIT culinary course.  After graduating, she travelled to Europe and explored the culinary world of Italy, Switzerland, France, Greece, Germany and the Netherlands. 

Chef Porter has worked as a sous chef and executive chef at a number of Edmonton restaurants.  She was a bronze medalist at the prestigious Gold Medal Plates Edmonton in 2014, and won first place in the steak category at the Canadian Food Championships. 

Chef Lindsay Porter recently fulfilled her dreams by opening her own restaurant, London Local, which draws inspiration from her British heritage. 


  • The English Garden Salad - Pickled plum, pickled apple, peas, salad cream, greens, candied pumpkin seeds
  • Scotch Egg - Sausage covered poached egg, house made HP sauce, mushy pea salad
  • Smoked Seafood Pancake - Smoked cod, shrimp and salmon wrapped in a leek and dill pancake with potato and pickled beets
  • Sticky Toffee Pudding - Sticky toffee cake made with dates, toffee sauce and vanilla cream
