Immediately following his monumental win, Trevor left the trades to pursue his true passion in the culinary industry, spending his first year learning from one of Edmonton's most prestige chefs, Daniel Costa.
Trevor now runs a private catering company here in Edmonton called TDCooks and is part of The Nomadcook, a chef agency and culinary consultancy, which books private in home events such as cooking lessons dinners and pop-up dinners coast-to-coast. “I’m so lucky to live here in Alberta, especially being a chef". "We have so many great farms and even stonger community backing the whole farm-to-table aspect of cooking".
Finding inspiration for his food by walking through the markets touching, smelling and tasting his way through the journey of menu creation, Trevor constantly looks for new flavours to explore or simply redefining classic memories and experiences into something fresh and new.

- Course 2: Sour cabbage slaw ~ apple, red onion, kohlrabi, cashews.
- Course 3: Braised pork shoulder ~ salsa verde, peas, wild ramps.
- Course 4: Duck white pavlova ~ selection of summer fruit, Chantilly cream.
